Fajita Salad

I really like Mexican food (ok, I’m obsessed with it!). A lot of my favorite meals have a Mexican theme, and this Fajita salad is my favorite! It is really easy to make and can transform leftover beef (almost any cut) into a stellar meal. This is great for dinner or lunch (I’ve even had it for breakfast!) or as a to-go meal (just stick in a big container or plastic bag and toss/shake with salsa before eating)

Serves: 4-6
Ingredients
  • skirt steak, flank steak or similar cut, thinly sliced-about ½ lb per person raw weight
  • 3-4 bell peppers, thinly sliced
  • 3 onions, thinly sliced
  • 2-3 hot peppers (optional, I use Chili, Anaheim or Jalapeño)
  • spices: garlic, cilantro, cumin, pepper
  • lettuce, spinach or mixed greens
  • 2 avocados
  • Optional: Salsa, sour cream, cheese, fresh chopped peppers
Instructions
  1. Thinly slice raw steak (or cooked leftover beef) and toss into pre-heated pan (or Wok) with oil or butter.
  2. When meat is almost cooked, add onion, peppers and spices and cook until done.
  3. Put fajita stir fry over greens and top with avocado slices and salsa
  4. Add cheese or sour cream if desired
