I really like Mexican food (ok, I’m obsessed with it!). A lot of my
favorite meals have a Mexican theme, and this Fajita salad is my
favorite! It is really easy to make and can transform leftover beef
(almost any cut) into a stellar meal. This is great for dinner or lunch
(I’ve even had it for breakfast!) or as a to-go meal (just stick in a
big container or plastic bag and toss/shake with salsa before eating)
